Standards for publication

Hi all,
I am a third-year political science phd student. Next month, I will be attending a conference in Mexico (the Convention on Biological Diversity COP-13) as a student-observer. My primary objective is to observe the negotiation environment/dynamics, and to get a better sense of the key issues being addressed.
I am wondering: what are the standards or recommended practices I should follow in terms of documentation? I would like to make sure that I have all my bases covered in the event that this experience leads to something publishable. However, in light of the potential reforms within the discipline, it isn't clear to me what I should expect. Are there any agreed-upon guidelines that I should consider? How would you recommend I approach this? Any ideas would be much appreciated.
